Creamy Tuscan Tortellini Soup

I’ve had this recipe pinned on my ‘Recipes to Try’ board.  (Confession: I have a slight obsession with Pinterest… and comfort food… )  Finally had a chance to make it last night and it was SO GOOD!  You can get the recipe found at The Recipe Critic’s site here… Creamy Tuscan Tortellini Soup.   I love how easy it was to toss together, and I actually used my crock pot, so it was even more appreciated at the end of the day!

I had a whole chicken on hand that I had baked the night before in preparation (rubbed with olive oil and dried Italian seasonings, 350 degrees 1 hr 15 mins), though I do LOVE that the recipe calls for a store bought Rotisserie chicken… such a time saver! Then, yesterday I was home around lunch time and had time to put it together, so I sauteed the onions and garlic as suggested, added those with the chicken, chicken broth, tomatoes (don’t drain!), cream, and beans. Threw it all in the crock pot. Set it on low and let it go for 5 hours.  About 30 minutes before dinner I threw in the tortellini and spinach, stirred it around and covered again. Dinner was ready by 5:30!
